- Perfect as an aperitif or with light hors d'oeuvres, with broths or with fish and egg-based dishes. It is particularly well-suited to traditional foods from the area where it is grown such as, in spring, white asparagus with eggs or au gratin, or with a scampi or shrimp risotto.
